Rain rain, don’t go away or we wouldn’t have this beautiful forest to play with! 🌧
The Northern Rivers was home to one of the largest low-lying subtropical rainforests in the world! With nutrient dense, red volcanic soil from Mt Warning (Wollumbin) and a high rainfall ‘The Big Scrub’ thrived. Though less than 2% of the original forest remains, we and other passionate locals are on a regeneration journey to bring it back! 🌳
Our gin helps us tell our story, did you know that of the 25 botanicals in Brookie’s Byron Dry gin, 17 are indigenous to the northern rivers! 🍸🍃

Ever read the tasting notes on a bottle of whisky and wondered whose job it is to write those descriptions? How someone can smell hints of toasted coconut and sea salt while all you smell is alcohol? 👃🏼🥃
We are all born with the ability to differentiate smells but it is a practiced art. Scents are heavily entwined with our experiences and one way to train that nose of yours is to use it! Make sure you’re smelling that pepper you’re cooking with, smell the nectarines at the grocer, smell the salt on the ocean breeze and you may be surprised what you pick up in our gorgeous single malt whisky that is aging up at our cellar door!
