Mac. by Brookie’s, a premium roasted macadamia and wattleseed liqueur celebrated the launch with a cocktail soirée in the chic new locals’ bar, the Green Room at the Beach Hotel.

Guests descended in the early evening onto the Green Room and were greeted with an array of cocktails that celebrated the smooth nut liqueur and paired with macadamia inspired delicacies and tasty tunes from Josh Boots of North Coast Entertainment.

Local gourmet providores – Brookfarm, Bread Social, Cheese Loves You and Salumi Australia supplied the produce that was creatively presented by Chef Mark of the Green Room in a luxurious grazing style spread as the centre piece of the room.

Mac. is masterfully created by steeping roasted macadamia nuts, macadamia nutshell and wattleseed in a wheat-based neutral spirit, before adding pure spring water from Wollumbin (Mt Warning) and a touch of natural local sugar cane syrup. The end result is the ‘Mac Daddy’ of all liqueurs, expect decadent flavours of butterscotch, cacao and coffee.

The bottle cap foil is colourfully designed with a rainforest inspired pattern featuring the native black cockatoo, reflecting the lush regenerated rainforest setting of the distillery.

“I grew up on our family’s macadamia farm established over 30 years ago in the hinterland of Byron Bay and this liqueur is paying homage to the nostalgia of growing up with this delicious indigenous nut” commented Eddie Brook, Co-founder of Cape Byron Distillery.

“We are absolutely stoked to release our latest creation, celebrating the native Australian macadamia nut, presented in a modern and playful liqueur that is so versatile”.

Mac. can be served on ice with a squeeze of lime, “Easy Mac”, or try it stirred down with whisky and bitters over ice as an Old-Fashioned, or even mixed through an Affogato with your favourite ice-cream and coffee!
